In June I had the opportunity to travel with The Paradise Society to Todos Santos, Baja California Sur, Mexico. Todos Santos is a small coastal town about an hour north of Cabo San Lucas. The trip was short and sweet, 4 days, 3 nights and we just so happened to be there during Summer Solstice. I thought it was pretty rad that we got to spend the longest days of the year in paradise!
We stayed at Pachamama Mexico a boutique yoga resort and holistic spa that was pretty unbelievable, as you can see in the photo.
We each had our own private Teepee, complete with a full bed, bathroom, shower, closet and drum roll please.. Wifi. I loved my little Teepee.
During our stay we had our own private chef, Clementina, an elderly local women that has been cooking for families and guests in the area for years. Her food was delicious. seriously it kept getting better and better every meal. The food was so clean and healthy which of course I loved! Each morning she would us make these amazing passionfruit smoothies. They were so refreshing and tasty…. Lunch and dinner were a variation of Kale salads, Fresh fish or shrimp, brown rice, black beans, pico de gallo and of course chips and guacamole!
On our last night at Pachamama Clementina taught us how to make Chile Rellenos, a traditional Mexican dish were you actually burn the skin off of Poblano peppers then stuff them with whatever you want! Kind of like stuffed bell peppers.
